For new hardware asa5525 and asa5545 is 9.1.2 stable?

I suggest you to go through the release notes of both the versions before you proceed.
for 8.6.1

Because any of the specific function you use might be an caveats here. So it worth reading the release notes before you.
But as far as i see both the OS are suggested by cisco as an preferred one.
Suggested ASA SW:
9.1.2
9.0.3
8.6.1
With respect to caveats 8.6.1 is considered as an stable one which has very few unresolved caveats.
