I am trying to design a callmanager express solution that will support the following:
* 30 IP phones
* 6 analog devices
* 30 voice mailboxes
* 1 voice t1 with DID
* 6 POTS PSTN lines for backup connectivity
* Daul internet connections
I am looking for hardware & module suggestions to support this configuration.

You can have dual Internet Connections but that still gives you a single point of failure is that acceptable?
You can use CME with CUE. The only question is how much mailbox time do you need and would this grow any further. You can either use the AIM-CUE or the NM-CUE.

The 6 analog devices, are they for any modems or just faxes? If they are only faxes you can use ATA-186 if not then I would use the new Modules

The Voice T1 I would use the NM-HDV Module for your T1 PRI or CAS.
I would definitly look at the new 3800 Series Routers. This will give you a lot of flexibility for the future in meet you needs of today.

In terms of the single point of failure, are you referring to the router?
We are currently load balancing a DSL and Frac data T1 with a Daul Wan router.
In terms of the analog devices
2 faxes
2 modems
1 postal meter
1 reserved
