I have a customer that would like to integrate Unity 3.1 with the current exchange environment. They do not want unified messaging and the message stores will remain on the unity server. They just want to be able to add and delete subscribers from the current servers. Can this be done and what do I need to look out for. Also, do I need Unified messaging licenes for this

Not sure what you mean by adding Unity subscribers from the other servers... you mean you want to use existing email users that are homed on those external Exchange servers as subscribers but you don't want to use Unified Messaging features?
Yes, you can do this no problem. No, you don't need UM licenses to do this. Without a UM license, however, you don't get the VMO client at the desktop (lets you playback and record voice mail using your phone or media device). You can't reply to voice mail from Outlook with a voice mail then... all your voice mail is simply email with attached WAV files. It also means you can't hear your email over the phone interface (TTS).
if that's what you want, no problem...
