multiple exchange servers single unity

I have running version 3.1 of unity. We have more than one organisation using our CCM. We would like to be able to use a single unity server to service more than one exchange 2000 server. We have setup a master AD domain and have trusted the two sub AD domains to the master. we have been able to make sure unity goes to a single OU but not multiple ones. Can this be solved or are we required to purchase another unity server.

Unity can service any mailbox in any OU or domain as long as they are in the same forest. The forest is the hard boundary for Unity.

If the Exchange servers are in the same Organization and in the same routing group, it should be pretty easy.
