What exactly is the Calhoun LED proc and is the utilisation a cause for concern?

Calhoun is : quote from startup console message "ROM: Bootstrap program is CALHOUN boot loader "
You should not be cocerned about the utilistation, because this is the processor load, it doe nothing more than controlling higher level processes like spanning tree , management and so on, the switching is done in the asics and therefore is not visible. My 3524xl has a default load of 40% but as traffic goes up this load stays practicly the same.
so evrything looks fine.

Thanks for that. The only thing is we have the same switches, same IOS, same spec on other LANS and they don't seem to have the same utilisation for that particular process.

You should not worry too much about that because the mentioned process controlls the lights on your front pannel so a switch witch has more ports with flashing lights(more nodes connected witch regular traffic) uses more of the cpu power, again this does not affect the switching power of the asics.
