If I back this up, does it back up the vlans created on the switch, or just the ports and what vlan they are in ?

It backs the vlans up .

Hi Carl,
if you back-up vlan.dat it backsup the vlan database
eg. vtp mode server
vtp doamin abc
vlan 2 name xyz etc
if you backup config.text, it backsup the information of the configuration running on the switch, eg.
interface fas 0/1
switchport access vlan 2
swithport mode access
spanningtree portfast
interface vlan 2
ip address 192.168.1.1
line vty 0 4
password xxxx
login
