You could try a search for "flash demo" in the CCO search tools. There are quite a few of them, but they tend to be marketing oriented. The only technical tutorial one I know of for sure is the one about VTP, but I am sure there are others.

One of the best tutorial tools is Networkers Online, but you need to subscribe. I spend quite a lot of time watching the presentations as part of my training. Have a look at http://www.cisco.com/go/networkersonline2004. There is a free session, and that could help you decide whether it is worth subscribing. If you go to Networkers conference, the NWOL access is included in the price.
