I currently have a 2950 connected to a 4000 switch via a GBIC module. I want to bring a 3750G stack switch in to replace the 4000. Can I establish a connection between one swich with a GBIC module to another switch with the SFP module?

Yes you can as long as you have same GBIC type on either end(SX/LX/ZX).
The physical interface for GBIC SFP is LC connector; for traditional GBIC is SC. So you will need LC-SC connector.
