Is there a way to setup a DHCP Reservation using the IOS DHCP Server?

There sure is
The following example creates a manual binding for a client named Mars.cisco.com. The MAC address of the client is 02c7.f800.0422 and the IP address of the client is 172.16.2.254.
ip dhcp pool Mars
host 172.16.2.254
hardware-address 02c7.f800.0422 ieee802

Thanks for the quick reply, Paddy.
It looks like I need to create a separate DHCP pool for this to work because when I try to setup the host command inside my existing DHCP pool, it says it will not work with the network command configured.

No probs..
Looks like you need to be running Cisco IOS Release 12.0(1)T minimum to use this command.
