Is it accurate to say that if you don't specify a logging source-interface that all logging info will go to the specified logging server.Thanks

That is correct. It is optional. logging source-interface command specifies that syslog packets contain the IP address of a particular interface, regardless of which interface the packet uses to exit the router.
