I think it is 2 different terms:
First: Full mesh is a network where all the component or nodes are interconnected each other.
Second: Hybrid could be considered a network built as partial, full mesh, star or ring topologies but connected with different mediums: copper cabling, optic fiber or even via wireless or a network that includes different topologies, as Luis mentioned: star topology connected to ring or double ring topologies.
So from my personal point of view, they are different terms.
