I recently replaced my RV180W with a RV160W, and have found out that the maximum concurrent wireless clients on the 160 are only 16 which i think are to low, I had my 180 set for 40. I read somewhere about using a 0 as unlimited, but that didnt work. Is there any way to increase this beyond the 16?

Even High-end AP cisco suggesting Max 24 Clients - I believe the newer version of Firmware they limiting to max 16 I guess here for better support.
Sometimes I was reading the document - I was not clear 16 associated client ( 2.4 and 5Gh so 32?) - I do not have these devices to test. but i believe it is 32 as per config.

I wish they would increase the limit to 32 on both bands, even consumer routers have the ability to have more then 16 devices on either band, consumer routers can have a max of 256 devices on wireless

I have the same problem, only 16 devices are supported in both bands, is possible to update it ?! my house has a 42 devices, (it´s a smart house)
