Hello all,
Let´s say I need to connect three data centers by ISP's IP/MPLS network. From the point of view of performance, without regard the physical links, What is the best technology that I should use GRE or VPLS?

Hello,
EVPN is clearly the best performing technology, generally speaking. The doc below discusses this in detail. GRE has been around for a long time and is available even on the lowest end platforms, while EVPN is not (and also requires BGP).
So the technological development is:
GRE --> VPLS --> EVPN
If equipment is not the issue, EVPN would be your choice.
