Could anyone point me in the right direction for researching this issue?

its looks like cert issue :
The fully qualified domain name(FQDN), provided by the vpn peer doesn't match the one stated on the digital certificate, but that's not enough of a reason for it to refuse to establish the connection.

as per the output the vpn up and running

there is spoke-hub (which seem ok)
and there is spoke-spoke which i think is failed,
