I want to configure EVPL circuits, so that each EVC (sub-interface) is traffic shaped to its CIR.
E.g. If I have four EVCs to four different sites on a 1Gbps UNI, vlan 100 with CIR 100Mbps, vlan 200 with CIR 10Mbps, vlan 201 with CIR 10Mbps, and vlan 202 with CIR 10Mbps. How do I traffic shape each EVC to its respective CIR, so I don't get packet loss due to exceeding the CIR?
And how do I do this with WFQ, so that my HTTP users don't crowd out my Outlook users? Is ssr-queue effectively the same thing?

The 6500 series only supports advanced QoS features with "WAN" cards. "LAN" cards don't support shaping. I believe the Nexus is weak in WAN type QoS too.
Since you're planning on moving to a Nexus, I would suggest placing another device in-line for better WAN QoS support.

Do either of them support Generic Traffic Shaping on Ethernet sub-interfaces? That's really all I need to prevent overrunning the CIR on the EVCs.

I don't believe Nexus does. The 6500 can with the right kind of line card, e.g. a FlexWAN, but again, not on "LAN" kind of line cards.
