Hello,
I have two core routers (R1 and R2) in the main location and I am running HSRP between them. I want to build a GRE Tunnel with branch router (R3) using HSRP virtual address. A simple diagram is attached for reference. Can I use the HSRP address in the source and destination of a GRE tunnel? Is there a document that anyone could please share regarding using HSRP virtual address in GRE tunnel?

This works fine. I have done it many times to build simple HA configs.
Just make the "tunnel source" the HSRP address on the HSRP routers, and for the remote router(s) make the tunnel destination the HSRP address. The tunnel will appear up on the HSRP router that owns the HSRP address and down on the other.
