Interested Traffic ACL in Tunnel Protection Config

Hi Experts - Generally I configure IPSEC Site-Site VPN using Crypto map, defining the peer and match address (ACL for Interested Traffic) and finally binding the Crypto-map in the Tunnel or Interface

 

Now, i am configuring the IPSEC site-site VPN using Tunnel mode Protection method, where and how to define the Interested Traffic so that I can have control which traffic should be encrypted and plain traffic without encryption

VTI encrypts whatever traffic transits the tunnel.  You determine what traffic you want to transit the tunnel, "normally".  If you don't want traffic to be encrypted, either send it to the physical interface, or use a different tunnel (e.g. GRE).
