We have a production 7206 with 2 interfaces configured in a port channel to a 4510. I need to remove 1 side. What is the best way to take a link out of a 2 port port channel without stopping traffic on the other port?

Do some testing in a lab environment but you should be able to just go into the port you want to remove from the port channel and shut it down. This should remove the port from the channel and leave port channel running.

Thanks for the advice, that is what we thought, but when it happened it kicked us out of putty. So I have done more reading. We will try to fail over to the redundant pair and shut the port-channel down and remove it. One link doesn't really need a port channel anyway.
