What kind of cable/fiber can be used for ethernet or serial interface?
What it's designed to support.
Some times it might only support one specific cable. Other times, various cabling options are possible. Choice often determined by bandwidth and distance that needs to be supported.
Unfortunately, I don't believe I've seen a single link that addresses the breadth of your question.
For same reason, "some explanation" would be very long.
Try searching (Internet, Wiki, Cisco's main site) for cat3, cat5, cat5e, cat6, cat6a and cat7 to address copper Ethernet. For fiber, there's different variants of MM and SM fiber. Then with those go different optics to support different distances and technologies.
For serial, try initially searching for RS (EIA/TIA) - ### standards or the V.## standards.
