N7K-F248XP-25E -> what is the 2 last number "25E" meaning?

Means you got the newest model of the F2 card, the F2e.
The legacy F2 card has a major design flaw where the F2 card cannot co-exist with F1/M1/M2 cards.
Cisco released the F2e card to address this issue. In the next OS release, F2e card can be in the same vDC as F1/M1/M2 card. But current OS means the line card needs to be like the legacy F2.

Hi,
For this I/O module the 25 relates to the Fabric version supported by the module itself and the number of Fabric Modules required in the chassis for full I/O.
There's an explanation of the I/O module numbering over at packetmischief.ca in the Nexus 7000 IO Module SKU Cheat Sheet posting.
Regards
