I have an old 2600 router, running version 12.2, that I intend to use to replace a 1700 router, temporarily until I can get an 1800 delivered.
Although I can get port fa 2 to function as a switchport on the 1700 router and therefore trunk vlans to and from a connected switch, I cannot do the same on the 2600 router.
The 1700 router has 5 fastethernet interfaces and the 2600 only has two.
Is this a limitation caused by the number of ethernet interfaces i have on the router ? Is there a workaround this

You need to configure sub-interfaces on the router. The 2600 needs to have the IOS version to support VLAN dot1q based sub-interfaces.
Try configuring on your router:-
Interface e 0/0.1 or fe0/0.1
under the interface then try
encapsulation dot1Q <
Obviously the switchport the 2600 connects to needs to be a trunk port!

I've tried configuring subinterfaces on the 2600 and the "encapsulation" command isnt recognized.

Then you need to get hold of a version os IOS that supports it - I don't know all the versions, but 12.3(15b) IP Only does, as I am using it.
