I would like to setup monitoring on a port for packet sniffing and I would like to use the CNA software. The issue is I can't seem to find the option. I believe it should be listed under the menu...Configure\Switching but it is not there. I am runing CNA version 5.6 (3) on a 4510R-E. Is this possible via CNA or do I need to do it from the command line?

The 4500 series switch does not support SPAN feature through the CNA application. In order
to do that, the you would need to do it using CLI.
Take a look at the features that are supported by 4500 using CNA in the link below.
On the switches where it is supported, you will find this option under switching in the configuration tab you should be seen SPAN option in there.
