I am setup a new Data Center, I'd like to know if exist an international sheath cable color coding?

I have never heard of one. Each company seems to have their own rules.
I would suggest using very different colors for each rule. For example, if you use light blue for straight-through on a public segment, then use red for crossovers instead of say, green. It's much easier to see.
I also have a preference for the neon style colors, instead of the darker ones. They seem easier to trace in dark cabinets/racks.

I use red for trunks. It reminds me that a lot of things can go wrong if you touch one of these.
