I am in a position where i need to upgrade from Fabric-1 modules to Fabric-2 modules in my Nexus 7010.
Can these modules interoperate together in the same chasis to potentially perform the change without disruption to the Nexus or do I need to plan an entire outage to swap all the Fabric modules at once?

As I know, they will work. But Cisco does not support such configuration as a stable, and says that it was tested for a 30 minutes long. Ensure that you have proper NX-OS version.

Hello
It's possible to run FAB-1 and FAB-2 at the same time - but not recommended as FAB-2 will work in backward compatibility mode.
Such config possible during the migration process from previous fabrics to the new ones.
