Hi In one regular switch or Nexus7000, can we say all vlan use one mac address ? for example, there are 100 vlan, so the switch or Nexus should have one mac address for all 100 vlan ? Thank you

Hi,
Yes by default all the vlan interfaces on the nexus will be using the same mac address.
Nexus7010# show int vlan 10
Vlan10 is up, line protocol is up, autostate enabled
Hardware is EtherSVI, address is 0026.981e.fc41
+Nexus7010# show int vlan 20
Vlan20 is up, line protocol is up, autostate enabled
Hardware is EtherSVI, address is 0026.981e.fc41 >> same mac address as vlan 10.

Not sure what you mean by this.
A switch will keep a record of the mac addresses of all devices in each vlan it knows about so each vlan could have any number of mac addresses.
I suspect you are not asking about that so can you be more specific.
