Is there a way to tell what version of SNMP is running on a particular IOS router?
Is there a way to force it not to use SNMP v1?

try "show snmp group"
If you don't want the device to use v1, configure a different version.

You can set the version number in the snmp server host

By default, all snmp versions are supported and the router can differentiate between v1 and v2 requests.
Best is to set access list to determine the sources which may send snmp requests to a device.
Configuring the snmp-server group is also an option. That command is also discussed in the above link.
