I have a C9200L switch running IOS 17.6.5. I am looking for the Command Reference page for the interface-level configuration command "switchport vlan mapping". I have looked through the indices of serveral IOS-XE 17.x Command Reference guides, but I can't find any references to it. I know that it's a valid command, as it's accepted on my switch.

You're right, it does seem to be missing from the command reference... I submitted feedback on it.
It's not the command reference, but this config guide might be useful to you: https://www.cisco.com/c/en/us/td/docs/switches/lan/catalyst9200/software/release/17-9/configuration_guide/lyr2/b_179_lyr2_9200_cg/configuring_vlan_mapping.html
