Even if it's not supported.
If possible I would like to do this temporarily until the users get cut-over to 1gb connections.

You can try this solution, however it is not recommended. Due to potential problems with your device warranty.
(config)# service unsupported-transceiver
Warning: When Cisco determines that a fault or defect can be traced to
the use of third-party transceivers installed by a customer or reseller,
then, at Cisco's discretion, Cisco may withhold support under warranty or
a Cisco support program. In the course of providing support for a Cisco
networking product Cisco may require that the end user install Cisco
transceivers if Cisco determines that removing third-party parts will
assist Cisco in diagnosing the cause of a support issue.
(config)# no errdisable detect cause gbic-invalid

I recall someone I used to work with using this command for non-Cisco SFP's. But the device supported 100/1000. The WS-X4448-GB-SFP says that it only supports 1gb. Has the command worked on cards that only support 1gb SFP's?

I think you will need to source one of the following as the 4448 only supports 1Gig SFPs:-

I have another 4500 that has the newer gig line card - WS-X4640-CSFP-E, and I was able add a 100mb SFP and it worked. So I thought that if I used the same IOS on the older card (WS-X4448-GB-SFP) it would work, but it will not load the image. It keeps reverting back to the older image. The only difference is the one with newer card is a 4503 and the one with the older card is a 4506.
I have the boot statement in there for the new image. The way the files are displayed on the 4506 look different from the 4503:
