I need to know what is the maximum number of subinterfaces in 7609 equipment, in any GigabitEthernet link?
There is a table with a relation of performance and number of subinterfaces?

There is no hard limit as such, it all depends on the IDBs (Interface Descriptor Blocks) supported by the platform and IOS. See this link for more details -
