Hi
Even 3750 model switches comes up with the same config of both 48*1G ports + 4 SFPs, if you shed more light on what is your exact requirement with a small background about your setup will help to get more suggestions from other experts as well.

Than,
2960's only have 4 SFP's. To have SFP's more than 4 number, you have to :
1. Use another switch like 3750 with 12 SFP ports.
2. If this switch is a 2960-S switch, you can use a stacking module and stack another 2960 switch to have more SFP Ports.
3. As mentioned by your colleague, you can use a Copper to fiber converter to achieve the same.
