We are currently running a pair of core Nexus 9508's in nxos mode and now have requirements to add quite a few sets of "remote" leaf/ToR switches in various places in the DC. The 9508s are running OSPF and HSRP, etc. My question, the ToR switches. Is the best recommended method of connectivity to simply connect the ToRs to the 9508 via vPC's and simply trunk all the vlans? I assume if a routing decision needs to be made, everything will be pushed up the Core?

Correct. If the TORs are connecting to both 9508, use Portchannles with VPC, and trunk all the VLANs you use. If TORs connect to only one core switch with multiple uplinks, you can simply use Portchannles (without VPC) and trunk all the VLANs you use.
