I am doing an activity where I need to assign the IPv6 addresses to the router interfaces and then auto config the PC IPv6 address. My understanding is that it would be a eui-64 address generated in this field, but it keeps generating a duplicate address(the IPv6 for the router interface). I am stuck here if anyone could please offer some ideas or point me in the right direction. I can provide extra information if needed.

yes, 2 ways to configure link local address: statically and automatically with eui-64 address generated by device. But I think I see you have same Link local address on fa0/0 and fa/01 on the router. change one of them to FE80::2 link local.
not sure about PC config in PT. it also should be automatic, and maybe the your entry is for manually assign address. what happens if you leave that filed "link local address" blank ?

both link locals need to be FE80::1
i need to manually assign ipv6 addresses to each interface while letting connected PCs autoconfig
if i leave the "link local address" blank it will autogen when auto config is selected.

set up router first, leave PC's "link local address" blank, or better yet reboot PC (or add new PC) after router is all good. Connect PC
not sure if that SLAAC works as it should in PT; i test it later
