I need to upgrade the SNMP version on our switch so I can capture more information from the switch. I need to find the process to upgrade to SNMP version 3 and how to make sure it is safe. I only need it open to one server that will e gathering the information. The switch we use are Cisco 2960 and we are running SNMP version 2.

Check the configuration guide, it covers SNMPv3 as well as your auth and priv options. If you want both auth and priv (suggested) it does require the k9 image. Post a show inventory if you need help selecting the correct IOS.

So in order to upgrade to version 3 we have to update the IOS on the switch?

You have the K9 image so you are good to go. No IOS upgrade needed.
