I wanted to know if there is a way of upgrading the IOS on a stack of 6 - 8 3750's with minimal impact at reload. Is there a way to reload one member at a time?

As Reza advised there, you can reload one member with "reload slot stack-member-number" command but due to IOS mismatch (after upgrade) it won't join the stack.

But once all of them have been rebooted - all with the same image, will they form the stack again?

Hello,
As previously stated a stack has to run the same IOS or it'll partition.
If you have sufficient flash space you can upload all the new IOS images configure the boot commands and just hit reload at a convenient time, that way it's just a single 5-10 minute blip (depends whether bootloader upgrades or not).
