Hello,
I have a high visability production LAN network for a major corporation. I wnat to turn on IP CEF switching. I don't think this config change will effect / interupt the traffic but I just want to confirm. Thanks.

You had indicated this is a high visibility network and hence, any changes unless you are 100% sure that it won't cause any disruptions you are better off scheduling the changes to be implemented during the maintenance window.
However, AFAIK, enabling CEF switching in the router s/b non impacting unless the code you are running is vulnerable to any severe CEF bugs. With the powerful processing capacity of modern day routers the router s/b able to build the CEF table pretty quickly and no impact s/b felt.

Phil,
A quick bug scrub using the keyword CEF pulled 50 bugs for this code. Use the bug toolkit on CCO at the following link to review the bugs for any potential issues that might affect your situation.
