what devices can you connect to a cisco 5000 switch running 4.2(1)N2(1).

would like to free up some 10 gig ports on the Nexus 7K.  Wondering if i could move some of the 7K 10Gig connections to our 3750 switches to the 5K's

On 5ks the ports are 1Gig/10Gig.  So if you have 10Gig SFP+ you can move the ports from 7k to 5ks.

3750 is mainly a gig copper switch with some fiber uplinks ports, but not all the ports can be used as 10Gig.

I guess what I am really asking is, can I connect other switches, such as the 3750 directly to the 5K using a ten gig connection?

Yes, that should not be an issue.  Connect the 3750 via 2 10Gigs to both 5ks and configure VPC.
