A default route is given on 2 stub routers connected to each other...and where a pc pings an unknown network, what happens

The packet will play ping-pong between these two routers until the TTL counts down to zero.
You can easily simulate that with GNS3.

As there would be no longest match route in the route table, the static default would be used, pointing towards the other router. Then on the other router, the exact same thing would happen.
As karsten said, the packets would bounce back and forth until the TTL was decremented. If you set this up in GNS3 or on a lab, a traceroute would also show the routing loop.
