I just just completed a Cisco Meeting Server lab while at Cisco Live last week, the lab guide we used can be found here:

Multiparty Conferencing for Audio, Video and Web Collaboration using Cisco Meeting Server

Note, the IPs etc in the guide won't work, but you can follow along in the guide to understand and configure a CMS.

Don't see why not, it's a publix website, just select a POD and then there is a download option in the menu at the top right.
