I am trying to find more information on the new In room Control feature in CE 8.x. I really like this feature and I would like to demo it in a simple way.

According to the user guide.http://www.cisco.com/c/dam/en/us/td/docs/telepresence/endpoint/ce81/sx-mx-in-room-control-guide-ce81.pdf it says:
"You need a Cisco video system with a Touch 10 user interface, and a thirdparty control system, for example Crestron, AMX, Apple HomeKit, or Android."

So I thought, Apple HomeKit nice. But I cant find any information about this integration. There are some information about Crestron and AMX but limited.

I found this Youtube video https://www.youtube.com/watch?v=R9-FHzSuAoY using Philips Hue. Seems simple enough but again I cant find any information about it.

Has anybody in here used this feature and can anybody bring ideas on how to set this up as a simple demo in my Lab/showroom ?

Take a look at control-av-equipment-touch-10.  That guide you linked to contains all the information needed to setup and use in-room controls with the Touch 10.

What ever control system you choose, it has to be able to connect to the codec's API, for example via RS232 or Telnet/SSH.  From there it would need to be able to receive the codec's output from the API and even possibly send commands back so it can provide feedback to the Touch 10 buttons.  As people use the Touch 10, the control system receives event feedback from the codec and based on how you have the control system programmed, it should send the relevant commands to the room devices.
