Hi,
I need to install CUCM in a lab environment. I have access to the CUCM Recovery Disk. Will this allow me to install CUCM from scratch? How do I get a demo license?

Your best bet to stand up CUCM in a lab is to grab the free vmware player. You will need the installation disc, not the recovery disc.
Once you have installed your version of CUCM (5.x or greater) in vmware, you will receive a small pool of licenses for free.
Note that it will of course be unsupported by TAC - so don't put anything production on it.

Thanks Mark. Are you saying I can download a VMWare image with CUCM already installed? If so, what's the link?

No, you need to legally own a copy of CUCM in order to do this.
Instructions for installation - albeit for regular vmware but the concept is the same for vmware player --
