Does anyone has any recommendation and/or update documentation how to perform a Cisco 11.1 to 11.5 CUCM upgrade to existing BE6K\VMae\UCS?

The documentation you need is the CUCM 11.5 upgrade guide and the RN for the specific release you're upgrading to, those are the two docs you need to review for everything there is to know about the upgrade.

C) README from ISO file for upgrade and OVA template

Read the above and you will have all the information you need for the upgrade.
