You need to purchase Real Speak sessions for your Unity Connection license, which increments your license file by LicRealspeakSessionsMax (the amount you ordered). You do not need to add Nuance to your UC install. I don't recall the specific part number. In your System Settings, under External Service - create a new service. We called ours Outlook Web Access and assigned the service capabilities "User access to email in third-party message store". In the User configuration, you then add an External Service Account to the user that wants this functionality; put the user in a COS that has the checked boxes "Allow Access to Advanced Features" and "Allow Access to email in third-party message stores". The online system guide help is good in documenting the entire process.
