Anyone know how to go about changing the SMTP address for each user. When they were created the SMTP address was incorrect so the addresses were generated incorrectly. I also need to change the systems default SMTP address.

Toward the bottom there is a Domain Name Changer that will change the SMTP addresses of your users.
Not TAC supported. Had success with it for a customer.
