When a Unity account is first created, the default greeting is a recording reading off the extension number configured on the Unity profile.
When a user first logs into their account during self-enrollment, they are prompted to change this by either recording their name or a full greeting.
Is there any way to restore the greeting to what it was initially (reading off the extension) without having to set the subscriber for self enrollment?
Any help would be appreciated.

Yes - this is the "system" option on the greetings page - you can choose three - either "blank", "system" or "recording" - if you set it to "system" it will play the subscriber's voice name if it's recorded and then say "is not available...". If no voice name is recorded then it'll put in the extension number.
There's no way to force Unity to use the extension number if a voice name is recorded, however. If you want only the extension number to play out and not the voice name, you'll have to delete the user's voice name or record a custom greeting with what you want.

How can I delete the users recorded name without deleting the account entirely or without setting the subsciber for self enrollment?

Well, there's no bulk way to do this if that's what you're looking for. It'd be easy enough to write a script to do that but it's kind of an unusual thing to do.
What is it that you're trying to do here? Are you attempting to reset mailboxes or something? It might help to better understand your goal here...

That is a good question, I'm trying to do this too and haven't figured out a way.
I'm using UCM-BE 7.1.3 (Business Edition where Unity Connection is installed on the same hardware as UCM).
I have a high turn-over position and am looking for an easier way to handle turning this over to the new person. A Phone setup in UCM, Translation Pattern for the DID, an End User in UCM and Subscriber in Unity Connection. It's fine when a body fills the position and after turn over is complete, it's during the transition period I'm looking for some help.
When the old person leaves I want the extension to remain, the device to remain and voicemail box to remain. I Don't want someone to hear the old persons recorded name or recorded voice, or find this extension by the old persons name.
First I'll reset all the passwords to prevent any access. Second I'll change the name on the phone (Alerting name and Display name) to something generic, change the end user name (for corporate directory) then Sync the subscriber. This will update most of the fields in the subscriber. I'll finish cleaning up the subscriber by setting for Self Enrollment (prepairing for the new person) and changing the greeting from personal to System.
Now if someone uses the Auto Attendant they can find the mailbox by the generic name now however it plays the old person's recorded name. I'm trying to keep this as accessable as possible so I don't want to remove this user from the Unity directory. Any ideas?

This exact functionality was added to the Bulk User Delete tool:

there's a "reset user" option that lets you decide what to clear out of a user's mailbox including their greetings, voice name, PIN etc... it's designed for just this type of scenario.
Unfortunately it only works with stand alone installations of Connection 2.x and later - CoRes (business edition) does not work since PW management is done by Call Manager in that case (not Connection) and so one of the critical items you'd want to reset cannot be managed from off box via ODBC.
