Unity with multiple message stores?

I currently have a Unity 4.0 box with UM using an Exchange 5.5 message store off-box. I am in the process of adding an Exchange 2003 server to serve additional users and would like to have Unity point to both the 5.5 and 2003 servers as UM message stores.

Is this possible? I cannot find any documentation to support it although I see some users from the forums doing the same thing. Can anyone point me to the proper configuration guides?
