Is there a way to upgrade a CUDAC (8.6) to the new Cisco Attendant Console Standard version 10.5, or do we have to built it from scratch ?

From scrath, the CUACS option does not have any server, as the old ACs, you only need the CUCM config and the clients.
Review the install and config guide available on cisco.com for all the details
And also, as far as I can remember the only AC that you cannot upgrade to CUACA, is CUDAC

Customers who have Cisco Unified Attendant Console Department Edition with a valid UCSS contract may migrate to Cisco UAC Standard Version 10.x at no additional cost. These customers may order Cisco UAC Standard Version 10.x license codes in the Cisco PUT. Customers without valid UCSS contract may order Cisco Unified Attendant Console Standard using the standard config. L-CUAC10X.
