Does anyone know of a way to use the IH to record a push button response (like a number), rather than recording callers voice responses.

No - you can't do that. The record is specific to audio, not TT events - those get acted on up stream (i.e. they terminate the recording) and it moves on to the next state. There is no provision there for "recording" TTs.

Currently there's no mechanism to record a series of TTS as a message. There are conversations that collect TTs (i.e. for changing your transfer number over the phone) but these are special conversations that store TT strings based on TT events and store the resulting string. There's no way to save TT entries as a message for a subscriber or DL or the like at this point.

Is there a way to make the IH initiate calls to people, like some of those surveys do? Also, there is probably no way to know where the call came from?
That would just have to be a question, I suppose?

No - Unity is not designed to do canvasing type calls like that. The only notification capabilities Unity has is notifying subscribers of messages of various types - it will call (or page or email or SMS) those subscribers and they can log into their mailbox to get the messages - that's the only callout capabilities in the product.
