I got into a new environment and saw UCS is using nimble storage with ISCSI. but they are using 1500MTU as opposed to 9000. IS is not best practice? how do I check for any dropped iscsi frames?

Jumbo frames for NFS or iSCSI is generally a best practice, unless some interfaces along the way don't have jumbo frames supported. iSCSI is no different than any other type of TCP/Ethernet traffic, in terms of troubleshooting drops.
Check your interfaces for drops/errors, queueing drops, tail drops if going through IOMs
