The only switch which support NAT is 6500. If you use 3750 or something like that, then you may be better off looking to a low end router to do the NAT.
This command will not affect your traffic and you don't need a maintenance windows.However you shouldn't issue this command as it might cause problems in the future, especially if you intend to use HSRP, VRRP or something like that.
