So, it turns out that the answer was staring me in the face the whole time. Just need to check the "Use Advanced Options" box and enter "-o nolock" in the Command Line Options. This will allow connection to a Synology NAS with NFS enabled.
Each interface will have a MAC address. There is no device MAC address. Whichever interface you are connected to is the MAC address you are sending packets to and from.
